Lisa Barbara's Coconut Milk Ice Cream

1 Can Coconut Milk *
2 Cups Frozen Mixed Berries (Costco)
1 tsp Pure Vanilla Extract
1-2 tsp Agave Nectar (to taste)

Lisa says..."Place all ingredients in a blender and blend until smooth. Pour into 4 small dishes. I used coffee cups. Freeze for 1-2 hours until firm. Enjoy. Although you definitely don't need to, I added chopped almonds and it was sooo good".

*Be sure to read the label when you buy your coconut milk, some brands add water, don't buy those.

  1. Thank you for this recipe. I don't have an ice cream machine and saw a recipe like this on another CF/Paleo blog but haven't been able to find again. It's been driving me crazy since I'm dying to try some ice cream made from coconut milk.
